Sweet Potato Biscuit Recipe


Ruth Ella loves to be in the kitchen. The other evening Rebekah and I found her wanting to bake.
So, I thought I would share a few pictures of our young baker, and our sweet potato biscuit recipe that I promised long ago.













Sweet Potato Biscuits

1 cup mashed sweet potatoes
2 Tbs. honey
1/2 cup oil
3/4 cup buttermilk or yogurt (we use yogurt most the time)
2 cups freshly milled flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
dash of nutmeg (optional)

Mix wet ingredients well. In separate bowl combine dry ingredients. Add wet ingredients and mix until a soft dough is formed (may require a little more milk or yogurt). Drop by spoonfuls on a greased cookie sheet. Bake at 400 for 20 minutes.

We double this for our family:)

The recipe is sweet, but Ruth Ella is even sweeter!!! She is so precious! I'm sure she is going to spend lots of hourse helping those big sisters bake!

Oh how sweet. I love that she wants to bake. : ) I've had the BB book for over 3 years and having been saying for that long that I need to make these. I'm putting SP on my list. Normally we have them on hand but, of course, we are out right now. LOL.

Oh the joys of having wee ones! I have often walked in my kitchen to find Zechariah decided to get things out to play and taste... :)

Looks like a good recipe. Never heard of the book. I will have to check it out!
