Sweet Potato Biscuit Recipe
Ruth Ella loves to be in the kitchen. The other evening Rebekah and I found her wanting to bake.
So, I thought I would share a few pictures of our young baker, and our sweet potato biscuit recipe that I promised long ago.
Sweet Potato Biscuits
1 cup mashed sweet potatoes
2 Tbs. honey
1/2 cup oil
3/4 cup buttermilk or yogurt (we use yogurt most the time)
2 cups freshly milled flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
dash of nutmeg (optional)
Mix wet ingredients well. In separate bowl combine dry ingredients. Add wet ingredients and mix until a soft dough is formed (may require a little more milk or yogurt). Drop by spoonfuls on a greased cookie sheet. Bake at 400 for 20 minutes.
